Bakery Products with Stevia :






PUMPKIN MUFFINS

INGREDIENTS :

  • 8oz (1 can)                                         Pumpkin Puree

  • 5 g                                                       Stevia Sachets

  • ½ Cup                                                 almond flour

  • 11/2 cups                                           whey Protein

  • 1 tsp                                                    baking powder

  • 1 tsp                                                    salt

  • 11/2 tsp                                              Pumpkin pie spice

  • 2 tsp                                                   cinnamaon

  • ½                                                        white egg

  • ½ cup                                                 water

  • 2 tsp                                                   Vanilla extract

  • ½ cup                                                 chopped walnuts (optional)

  • Preheat the oven to 350 degrees. Oil the muffin tin or use paper (if you use papers, oil them first or they will stick).

  • Mix the Flour and baking powder together in a bowl.

  • In a large bowl mix pumpkin, stevia, pumpkin pie spice, cinnamon, vanilla, milk and egg, salt until it becomes smooth. Fold in the dry ingredients, stirring as little as possible. Mix in the walnuts if desired.

  • Place into the loaf pan. Bake for 25-30 minutes until a toothpick or fork stuck in the middle comes out clean. Let them cool slightly then tip them in the tin to cool the rest of the way.

  • Makes 12 servings.






Oatmeal Raisin Cookies

INGREDIENTS :


  • ½ cup                                                  raisin (packed) then diced

  • 1 cup                                                   water

  • Zest of one orange

  • 1 cup                                                   almond flour

  • 2 gram                                                Stevia Sachets

  • I tsp                                                     vanilla extract

  • 2 or 4                                                  white eggs

  • 1 ½ cups                                            oats

  • 1 cup                                                  flour     OR

  • 1 cup                                                  isolated whey protein  OR Half of each

  • 1 tsp                                                   baking powder

  • 2 tsp                                                   cinnamon

  • ½ tsp                                                  salt


  • Preheat oven to 350 degrees.

  • Place the raisins, orange zest, and water in a small pan and stir over low heat for 15 minutes.

  • Allow to cool. (This can be done a day ahead).

  • In a mixing bowl, cream the almond flour into the softened butter. Stir in the stevia, almond extract, vanilla, and egg.

  • Stir the raisins into the butter mixture. Add the oats. In a separate bowl fold together the flour, baking soda, cinnamon and salt.

  • Stir / fold the flour into the other ingredients. Drop onto oiled cookie sheet. Bake 12-15 minutes. Makes approximately 54 cookies.







CHOCOLATE CHIP COOKIES

INGREDIENTS :


  • 1 cup + 2 tsp                                     All-purpose flour

  • ½ tsp                                                  salt

  • 4 g                                                      Stevia Sachets

  • ½ tsp                                                  Baking soda

  • ½ cup                                                 butter (softened)

  • ¼ cup plus 2 tsp                                Baking Blend

  • ½ tsp                                                   vanilla

  • 1 large                                                egg

  • 6 oz                                                     chocolate chips

  • Preheat oven to 375°F.

  • Combine flour, salt, and baking soda in a small bowl.

  • In a separate large bowl, beat butter, baking blend and vanilla. Put the egg in it.

  • Gradually stir in the flour mixture. Once stirred properly, stir in chocolate chips.

  • Drop by rounded tablespoons on cookie sheets and press down to slightly flatten them.

  • Bake for 9 to 11 minutes or until lightly browned. It will give about 18 cookies.






BLUEBERRY MUFFINS

INGREDIENTS :


  • 1 cup                                       whole wheat flour

  • 1 cup                                       all-purpose flour

  • 2 tsp                                        baking powder

  • ½ tsp                                       baking soda

  • ½ tsp                                       salt

  • 1 tsp                                        grated orange peel

  • 20 drops                                  Fosstevia Liquid

  • 1tsp                                         honey or corn syrup

  • 1 cup                                       buttermilk

  • ¼ cup                                      vegetable oil

  • 1 ½ cups                                 fresh or frozen blueberries

  • 2 eggs


  • Preheat oven to 400°F. Line 12 muffin cups with paper baking cups.

  • Mix all the ingredients like flours, baking powder, baking soda, salt, orange peel, and stevia sweetener in a large bowl. Stir in buttermilk, oil, and eggs; mix until they get just moistened. Fold in blueberries.

  • Divide batter evenly among muffin cups. Bake for 20 to 25 minutes or until light golden brown color appears. Cool for one minute and remove from muffin cups.

  • It will give 12 servings.
